BANANA COCONUT-ORANGE MUFFINS  This recipe is a yummy way to use up ripe bananas.
 
1 3/4 c. flour
1/2 c. sugar
2 tsp. baking powder
1/4 tsp. soda
salt
1/3 c. Veg. oil (like Mazola oil)
1 egg
1/3 c. orange juice
1 tsp. grated orange rind (zest)
1 c. mashed bananas (about 3 ripe bananas)
1/2 c. coconut
 
Combine dry ingredients.  Add remaining ingredients in order given.  Place into greased muffin tins (I use the paper liners -- easier clean up).  Bake at 375% for 25-30 minutes. 

OVERNIGHT COFFEE CAKE
We seem to have a lot of overnight guests at our "Bed and Breakfast".  So that I am not rushed and in the kitchen the entire time, I like to make and use different recipes that free up my time so I can visit with our guests.  

Sift together and set aside:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Cream together until fluffy:
2/3 cup butter or margarine
1 cup sugar
1/2 cup packed brown sugar
Add 2 eggs, one at a time, beating well after each addition.

Add dry ingredients alternately with 1 cup buttermilk, beating well after each addition.  Spread in greased and floured 13 x 9 cake pan.

Combine and mix well:
1/2 cup packed brown sugar
1/2 cup chopped nuts
1/2 tsp cinnamon
1/4 tsp nutmeg

Sprinkle over batter.  Refrigerate 8 hours or overnight. Bake at 350 degrees for 45 minutes or until done.  Serve warm if desired.

OVERNIGHT BREAKFAST ROLLS
I made this for A New Year's Day breakfast several years ago. It was one of those interesting recipes that I just had to try and I am so glad that I did. It is a keeper. This was So easy and really good too!

3 T. melted butter
1 c. brown sugar
cinnamon and nuts (opt.)
12 Rhoads frozen bread rolls
1/2 pint of whipping cream

In a 9 X 13 inch pan, place the melted butter and brown sugar on the bottom. Spread it out over the bottom of the pan. Place evenly spaced 12 Rhoads frozen bread rolls. Pour the whipping cream over the top of everything. Cover with plastic wrap and let it sit out overnight to rise. The next morning, preheat oven to 350 degree and bake the rolls for 25-30 minutes. Let set in pan for 15 minutes after removing from the oven. Now, invert the pan (using a cookie sheet works well). The rolls are good and gooey.


60 MINUTE CINNAMON ROLLS
Yep, you can get these done in an hour (except in the dead of winter in a cold house!). We make these all the time and everyone loves them.

2 pkgs of dry yeast
1/2 tsp. sugar
1/4 c. warm water
(dissolve the items above together)

ADD:
1 1/4 c. scaled milk
2 tbl. shortening
3 tbl. sugar
1 tb. salt

ADD: to the yeast mixture, 3 cups of flour.

Knead on a floured board, adding as much flour as necessary to handle for a few minutes. Let rest for 5 minuts. Roll out and spread with butter, sprinkle with sugar and cinnamon (and raisins if you wish). Rolls up and cut into 1 inch slices. Let set in pan for 15 minutes. Bake 12-15 minutes at 400 degrees. EAT! (I bake these in a 9X13 pan.)

If you want you can double this recipe (we always do) but do not triple it as you cannot work the dough fast enough and it will not raise properly. You can also make sticky rolls out of these by putting all the goop in the bottom of the pan before baking. YUM!


Pot Luck Oatmeal
Really good and nice to wake up to a hot oatmeal that is a little different. We really enjoyed it. This serves four.

l l/2 C (one 12 fluid ounce can) carnation evaporated skim milk (I just used 1% milk)
1 l/2 C water
2 T sugar
2 T brown sugar
1l/2 t apple pie spice
l/4 C maple syrup
l C quick oats
l C cored, peeled and chopped cooking apples
l/4 C raisins
l/4 C chopped walnuts.

Spray slow cooker with butter-flavored cooking spray. Pour milk, and water into container. Stir in sugars, spice and maple syrup. Add oats, apples, raisins, and walnuts. Mix well to combine. Cover and cook on low for eight hours. Mix well before serving.


APPLE PRALINE BUBBLE BREAD
1/3-cup butter or margarine
1/2 cup packed brown sugar
1/2 cup chopped pecans, divided
2 packages (11.3 ounces each) refrigerated dinner rolls
1/4 cup sugar
1/2 teaspoon ground cinnamon
1 medium granny smith apple

Preheat oven to 375. In covered Micro-Cooker microwave butter on HIGH 30 seconds or until melted. Stir in brown sugar; pour mixture into bottom of Fluted Pan, spreading evenly. Sprinkle half of pecans over brown sugar mixture. Slice dinner rolls in half crosswise. In Small Batter Bowl, combine sugar and cinnamon; roll dinner rolls in sugar mixture until evenly coated. Arrange half of the dinner rolls over bottom of pan. Sprinkle remaining pecans over rolls. peel, core, and slice apples using A/P/C/S; cut slices into quarters and chop using Food Chopper. Sprinkle apples over dinner rolls in pan. Arrange remaining dinner rolls over apples. Bake 35-38 minutes or until golden brown. Remove from oven; carefully invert onto nonstick cooling rack to remove bread. Let stand 1 minute before removing pan. Cool slightly. To serve, pull apart or slice using Serrated Bread Knife. Yield 12 servings

 

OVERNIGHT GERMAN COFFEECAKE or APFELKUCHEN
This recipe came from Westphalia, IA which is a German colony which is on the National Register of Historic Places. Many times these types of recipes are called "Apfelkuchen" which in German is apple cake.

2 c. flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon (divided)
1/4 tsp. salt
1 c. sugar
1 c. brown sugar (divided)
2/3 c. butter or margarine, softened
2 eggs
1 c. buttermilk (or sour milk - just add 1 tbl. of vinegar to your cup of
regular milk)
1 c. apples, peeled, cored, and chopped (I added more apples -- because I
like them)
1/2 c. chopped black walnuts or pecans

Mix flour, baking powder, soda, salt and 1 tsp cinnamon in a bowl and set aside. In another bowl, cream sugar 1/2 c. brown sugar, and butter. Mix in eggs, buttermilk, and flour mixture. Fold in apples. Pour into a 9 X 13 inch greased baking pan.

For the topping: Combine remaining 1/2 c. brown sugar, walnuts (or pecans), and 1 tsp. cinnamon and sprinkle over the batter. Cover with foil and refrigerate overnight.

The next morning: Uncover and let stand for 30 minutes (to help bring it to room temp.) Bake 45 minutes in a 350 degree oven. It is best served warm. Drizzle some thin powdered sugar icing on top before serving. This really was easy to make. I took it out of the refrigerator, and started to warm up the oven when I got up to let out the dog. I then did my morning stuff which takes about 1/2 hr. I then placed the coffeecake in the oven. We had a nice warm coffeecake with almost no work.
